Wow!!! That was really great chicken soup. Never thought it could be so good. The others pale in comparison. I like the slight after-burn from the hot pepper. It was just enough. The soup was strong and concentrated, not watery, and not greasy at all. Had a slight sweetness (maybe from the carrots) that played well against its saltiness. As for your balls ….. I remember the holiday tables where the “chefs” of my family would argue as to who had the lightest matzo balls. As far as I’m concerned the more shteiff (Yiddish for dense) the better. A good matzo ball should bounce like though little black handballs and weigh a little more. To me a great matzo ball must also sink (as yours do) rather than float. (If I want crap floating in my soup I would dump in a box of those tasteless cardboard soup nuts). The near perfect symmetry of your little darlings attests to your care and attention to perfection. Great balance of flavors. Nothing overpowered. What else you did put in to make me hungry for more of the flavor of the whole dish? (is it legal in New York and can it be smoked?) What’s for dinner … Better yet, who cares what’s for dinner. I’m sure it will be great. What time are you serving? - Jeffrey Litwin

Split Pea

As I finished devouring the third spoon of split pea soup my head started to swirl and I was transported back to the small kitchen in a Brooklyn apartment. Sitting with bent knees, to reach the top of a blue marbleized pattern table with shiny chrome edging, on a heavily padded matching tubular chrome chair, upholstered in blue vinyl and silver decorative thumb tacks at the edges was mom’s best boy. He had just come in from a hard days’ play.  Totally starving and unable to wait the half hour ‘til dinner, she lovingly served him a bowl or her special split pea soup.  He ate greedily and sighed in relief, but a wave of panic came over him.  He searched the bowl anxiously.  Had she forgotten?  Not to her best boy.  She would never forget.  What happened? Where was the marrow bone and the creamy prize inside?  My head began to swim as in a faint. My focus returned back to 2020.  As I gathered my senses I calmed down and comfortingly realized that this is real VEGETARIAN split pea soup!  The only difference from the original was that Mom added a marrow bone. Chef Sue's soups are one of the few things capable of taking the edge off these trying times. Absolutely delicious, healthy ingredients, delivered... what more could you ask?

My favorite is whichever one I've had last. But perhaps the tomato is the most comforting. (Disclosure: I just had that one.) They are so good!
